Who doesn't crave strawberries on a warm sunny day? I know I do! Strawberries will always be a crowd favorite. I decided to make yummy hand pies that you can take on the go! These are a perfect pastry for beach days, snacks, or parties! Hand pies make it easy to eat without all the mess a normal piece of pie could make. Follow along to see how to make these delicious Strawberry Hand Pies at home!

What you will need:

1. Two cups of fresh strawberries

2. Two and a half TBLS of sugar

3. Biscuit dough

4. One TSP of vanilla extract 

5. Flour to keep from sticking

6. Water

7. Two TBLS of corn starch 

8. One egg

9. Powdered Sugar 

Begin by rolling out your dough. Use flour to help prevent the dough from sticking to your hands or to the roller. 

Set dough aside and prepare your oven at 350 degrees. Now begin to cut up the strawberries.

Once you have chopped up the strawberries, add the sugar and mix well!

Time to make the filling! Place a sauce pan on medium heat. Add about half cup of water and pour in the strawberry/sugar mixture. Let that come to a boil. Once it has come to a boil, add the vanilla extract and corn starch. When adding the corn starch, you will want to prepare that in a separate mixing bowl with cold water. Whisk the cold water and starch together before adding it to the strawberries. Once everything is added, let the mixture sit and simmer. Remember to keep mixing every now and then to help thicken it. 

Once it is done (about 15 minutes,) allow it to cool. Once cooled, grab your dough and let's add the filling! Place in the center of the dough, then fold the dough in half. Pinch the ends together to secure. 

Whisk an egg and add a glaze on the top. This will help give a golden finish to your pies!

Bake at 350 degrees for about 20 minutes. 

Top with powdered sugar!
